I would like to introduce a new status to my workflow called 'Done - Config OFF' to be used when something id deployed to production and the functionality is toggled off.
I currently have 'DONE' status in my workflow which sets the ticket to Resolved - is it possible to have both statuses set the ticket to resolved as the 'Done - Config OFF' statuses is optional and may only be used by some teams.

Yes, it is possible to set the same resolution for both statuses. Alternatively, you could have a "Done" status with two resolutions :
I feel like having different resolutions is more intuitive. In both case, the status of the task is "Done"... however, they are considered done in different fashion. This however really is just an opinion :)
