I've created several projects using Agile Kanban type, but now I realized that all of them should be Agile Scrum projects. Can I just switch the type of these projects or will I have to delete them and them create them again with the right type?

Greenhopper boards are composed of JIRA issues, so if you delete the board the issue data will not be lost. If you want to create a Scrum board with the issues you previosly had on a Kanban board all you have to is to create a new Scrum board and select the project/filter of the respective issues you had on your Kanban board.
