Is it possible to track users' logged time in our projects using the "Time tracking" field? The native time tracking tool doesn't offer advanced options to categorize these efforts separately, such as Development hours and Bug fixing efforts.
And we need a restriction to field which is original estimate once the original estimate is created restrict the users to modify the Original estimate

For advanced time logging options, you will need to look for an AddOn in the marketplace.
Ex. in "Tempo Timesheets", you are able to create "Work Categories" like Development, Bugfixing, etc ....
Blocking a field from editing once entered is not as easy. You could create some kind of workaround where the field is only editable in a certain workflow transition, by certain people. Like explained here. But a possible solution depends on your requirements. Ex. when is the "Original Estimate" filled in ? By who is it filled in ? etc ....

JQL had a "CHANGED" operator but it works on Assignee, Fix Version, Priority, Reporter, Resolution, and Status fields only.

If you want to record worklogs with additional details and categorize them accordingly, I recommend using third-party applications from the Atlassian Marketplace. One such tool is WorklogPRO. With its attributes feature, you can add custom attributes tailored to your needs, which can be selected when recording worklogs. For instance, by adding a single-select attribute with options like "Development" and "Bug fixing," you can assign a category to each worklog entry by making this attribute mandatory in the WorklogPRO dialog. This allows you to group and analyze worklogs based on their category in the timesheet, helping you gain better insights into the time spent on each work type.
There is no straightforward way to prevent changes to the original estimate. For certain users, you may want to remove the "Edit Issues" permission to restrict all issue editing capabilities, or consider using a different add-on designed for this purpose.

My company offers AI data modeling services and one of our core models is an automated worklog estimate we call "Dev Days" - it can be retro actively applied to any of your projects and broken down by any other fields from Git or Jira, including custom.
Here is an example report showing dev days by ticket issue type as you mentioned:

You might consider using time-tracking apps that in most cases have a customizable report of tracked time on issues.
I can recommend our Clockwork Automated Time Tracking & Timesheets Pro app, which allows you to track time for individual users across the projects, and this data using timesheets and create reports that can be configured in various ways using break-down and filtering options.
With Clockwork, you can use the Worklog attributes feature to define the type of task done for a Worklog. You can set fixed values, making users pick from these, or allow users to add values for each Worklog created.
All this details can be reviewed as an Timesheet report, so you can easily filter type of work done.
