Instead of receiving individual emails for every change made on an issue types that you are a watcher on, is there a setting for a daily summary? reducing the number of emails from 150 to 1?

You can personalize email notification settings from Avatar -> Personal Settings.
See Manage your Jira personal settings.
You can also create a filter subscription (ex: all updated issues within 24 hours where I am assignee or reporter) and schedule it. See Manage Filters
