I'm looking for a report or dashboard gadget that shows the issues that have remained in a flow status column beyond a preset time interval, i.e.: Issues that have been In Progress for more than 5 days. I've also looked into creating a rule for this, but haven't yet figured it out.
Since Kanban is workflow-centric and is focused on streamlining workflow, I believe that such a report/indicator/gadget would be central to managing those issues.

Are you still looking for a decision? As an alternative, try add-on Time in Status for Jira Cloud, developed by my team.
It allows creating reports based on the status time of your issues. To see critical values you can sort by calculated values and Smart view feature to mode to highlight values on the page. It helps quickly notice and analyze values that are higher than others.
Also, you can export data for more detailed data analysis.

Our team at OBSS built Timepiece - Time in Status for Jira app for this exact need. It is available for Jira Server, Cloud, and Data Center.
Time in Status allows you to see how much time each issue spent on each status or assigned to each assignee. You can also pick individual statuses into Consolidated Columns to see metrics like Resolution Time, Ticket Age, Cycle Time, or Lead Time.
You can calculate averages and sums of those durations grouped by the issue fields you select.
The best part is: you can filter issues based on these values. For example, you can see issues that were in In Progress for more than 5 days.
The app calculates its reports using already existing Jira issue histories so when you install the app, you don't need to add anything to your issue workflows and you can get reports on your past issues as well.
Time in Status reports can be accessed through its own reporting page, dashboard gadgets, and issue view screen tabs. All these options can provide both calculated data tables and charts.

For this exact need we developed Status Time Jira app. It provides reports on how much time passed in each status. By grouping statuses you can get resolution time(E.g from new status to done status). You can also export the report as CSV.
Once you enter your working calendar into the app, it takes your working schedule into account too. That is, "In Progress" time of an issue opened on Friday at 5 PM and closed on Monday at 9 AM, will be a few hours rather than 3 days. It has various other reports like assignee time, status entry dates, average/sum reports by any field(eg. average in progress time by project, average cycle time by issue creation month). And all these are available as gadgets on the dashboard too. Here is the online demo link, you can see it in action and try without installing the app.

Out of the box you won't find any gadgets.
One tool that could do this would be the eazybi reporting. You can easily use a calculation to show tickets that are older than 5 days.
You can also use a scheduled rule with jira automation that checks whether tickets in certain statuses have been there for more than 5 days with a jql.

Your suggestion to use a scheduled rule with Jira automation is precisely what I'm looking to create/use. I haven't been able to find all of the pieces that I need, specifically determining "time in status" for each issue. I'll do some more digging.
Once I get the "time in status" for each issue, it's then a matter of generating the notice...most likely an email to me/other project admin(s).
