Looking to add several columns to the "Issues in Epic" list.. just like you can do with sub-task lists on standard issues (using jira.table.cols.subtasks)... is this possible>

One of the Botron family of JIRA add-ons - Issue Matrix solves this issue.
In a nutshell - Issue Matrix is implemented as a custom field, which displays as a separate panel on the Issue View page and contains a gird - a.k.a matrix which can show related issues to the current one - sub-task, linked issues and in your case all stories linked to an Epic. For each of the issue matrix fields you can configure which columns are shown in the grid.
To achieve the "Issues in Epic" you have to use the Custom JQL mode. On the documentation page there is an example for the exact case that you need.

Would be great if there was some hidden property we can update ala jira.table.cols.subtasks to show more columns in the "Issues In Epic" list on the view issue page, even if it's not through the admin UI.
