When you click on an issue in from a board, you get a pop-up showing the issue details.
Currently, a ton of fields are listed in the right column of the pop-up. These fields don't seem to be in any particular order and some of the most important fields are at the very bottom of the list (priority, due date, etc.).
Is there a way to control the order of these fields?
Also, is there a way to make our custom fields show up? We have several custom fields (functional specification, acceptance criteria, etc.) and none of these show up in the pop-up.

It seems you are talking about "Issue detail view" when you click on an issue on the board in Jira cloud.

Please note that ability to configure issue detail view is much more on server as compared to the cloud Jira.

Indeed @Josh , that's why I also shared that server has more customization possibilities than cloud :)

It doesn't seem that the instructions in that doc are having any effect on the new issue view. Changes I make there definitely affect the full screen issue view or the views i get during workflow transitions. However, the pop-up I get when clicking a card on a sprint board don't seem to be affected by changes I'm making to the issue view screen. Fields I've added to the view screen still don't show up and fields I've removed are showing up.
Oh well, chalk it up to another half-completed feature Atlassian is giving us.

Yes, you can.
To control which custom field needs to show on the issue view screen you need to go to project settings --> summary --> open the specific Issue type screen scheme and then you will able to see screen scheme to be associated to that issue type.
Open the respective screen scheme and then select the View issue screen and then you can drag n drop the fields( Up and down ) as you want to show.
Also, you can be able to add the new fields to your create issue screen and view issue screen.

This seems to work for normal workflow transitions or creating a new issue but I'm unable to figure out how to make it work for the new-ish issue pop-up that you get on a board.
