We have to change the status to 'Released' every time and would love a way for this to be its default!
I've got a workaround, it's not perfect, and I'd rather Jira remembered the last used setting.
Go on your Releases page, set the filter to what you want. I checked both Released and Unreleased. Then copy the URL, something like https://companyhere.atlassian.net/projects/XXX?selectedItem=com.atlassian.jira.jira-projects-plugin%3Arelease-page&status=released-unreleased
Now, in the left menu (ensuring you're still on the project), at the bottom, click "Add shortcut", then click Add opposite "shortcut" in the popup. Paste the URL you just copied, give it a name like "All Releases". You can also put an icon in the name field, just copy/paste a character from https://getemoji.com/ for example, I picked a calendar for releases (https://emojipedia.org/calendar/) and place it on the left of the name, so it lines up with other Jira icons.
Downside: it opens in a new window.
(In this screenshot, I've also got a link to the app "Structure" which allows me to show epics in the backlog and expand/shrink them to show the tickets inside)

Just click on Released, Jira will remember your choice next time you goes to the page. This is per user save.
There is no settings to change the default selected Quick Filters for the first time an user goes on it.

Unfortunately, this doesn't seem to be the case for me or my team. Every time we go off the tab and back onto it, it has reverted back to 'unreleased'

Do you use jira-cloud or jira-server ? If jira-server what version are you using ?

I don't use jira-cloud, may be someone else will be able to test if it has the bug too.
I don't have any problem on my jira-server instance.
There were a similar issue but on board in 2016 ( https://jira.atlassian.com/browse/JSWCLOUD-12898 ).

jira-cloud - same problem here.. it goes back to default (Unreleased) every time I leave the page ... it's quite annoying
