Issue list in epic shows all closed stories/bugs with green check mark. However the bug here is closed as "won't fix". It is highly misleading for someone reviewing the epic what was the resolution. Is it possible to add additional column with resolution and/or change the checkmark to be red or different for stories that are not resolved as complete or fixed?

I would set the resolution to "Fixed" for the "happy" path in the "closed" post function, and then create another transition to a status like "Cancelled." Use workflow properties to hide "Fixed" from the transition screen so the user can not select Fixed. Then in your Epic Report, you will see Epics Closed (Happy) or Epics Cancelled (unhappy.)
Is there anything that does not require modification to workflows? we have 300+ users/30k issues and would rather not touch that.

Having abilityto update workflows is really using the power of JIRA. If you do not have a JIRA administrator that is comfortable doing that, I would suggest outsourcing this to an Atlassian expert.
The built-in Agile reports can not be changed with front-end configuration, so you have to change what is being displayed in the report.
IMO . . .Changing workflows is not dependent on how many users or how many issues you have. But it is a balance between functionality and maintenance. No maintenance, however will not provide benefits to your end-users. (I'm currently working on an instance with 500+ users and 58 workflows.)
Good luck.

ok - but it is not epic report, it is the subsection "Issues in Epic" when viewing a specific epic. Would it still work?
