I have a team that started a sprint but one of the items had a linked item and it was in a To Do state and wasn't assigned to the sprint, which meant that when the sprint started they lost the linked item. Is there a way to highlight this and not allow the sprint to start?

You can't prevent the 'start of a sprint'. You can however signal that linked issues are not in the sprint, by using an automation rule. Having said that, it will depend on the linked issues if they needed to be added to the sprint or not. I can imagine number of scenario's were an issue is linked to an issue in the sprint, where the linked issue should not be part of the same sprint (e.g. another team is responsible for it).
So the best thing to do (imho) is to create an automation rule which will send an email which sums up all linked issues which are not part of the sprint. Then you can decide to add them to the sprint or ignore them.
