We would like to use the "Component" field as a validator to route issues with that component through an "approval" branch of our workflow. Is this possible?

You can most likely do this with an add-on such as ScriptRunner. I found a post titled Solved: How to validate field depending on component selection (simple script validator)? that may help you achieve this.
