We work within a company-managed project setting, using shared workflows and issue types. One team would like to customize their issue layout (as an admin, she was able to delete fields, etc.) but when she did, it impacted all of the other teams issue layouts - which makes sense. We were able to restore the deleted information but we still want to be able to make changes just for her team's board.
Is there a way for each team to customize some fields on the issue card layout without changing it for everyone?

The Project Admin (no Jira Admin privileges required) can make the changes for a specific project as explained here Configure field layout in the issue view | Jira Software Cloud | Atlassian Support.
If someone with Jira Administration privileges does the same operation and uses the "Fields" area to drag/drop different fields to the main screen section, this will have the impact you are trying to avoid. Jira will give you a warning when you "Save Changes" if the change impacts screens on other projects. The dialog box is titled "Changes will be shared with other projects". If you see this, "Cancel" the change and then "Discard".
