Can i create my own issues ? And set it to a correct workflow ?

Yes, go to administration section, select issue, and click on issue type. You'll can create your own issue, choose an avatar, put a description, etc...

Then go to "Workflow schemes" and set your issue type in the good workflow scheme to the correct workflow.
