I have a specific JIRA filter I'd like to share with my Confluence users, but I don't want any hyperlinks (the key and the issue type are hyperlinks by default).
It's not a security issue, as if they'll click on them they won't get anything, but I don't think it's very UX-friendly to show non-working links to the users.
Has anyone found a workaround for this?

For an Regular URL on the confluence page while editing the content click the hyper link and Select Unlink:
If its a JIRA Issue Key or Filter Result URL Confluence will attempt to Do a Markup on the URL as covered in This Article and convert to an issue link or filter results macro, to Bypass this conversion you can either place the URL in a {Noformat} or {code} block macro.
OR if you would like to fully disable Auto-convert site wide, please refer to the following article, noting this disables all auto-conversion options as an all or nothing approach:

Thanks for the clarification I misinterpreted your initial question, the noformat option and unlink would only work for a direct URL placed in a page, and would not work for the issue links in a jira issue macro, and the issue key links cannot be removed from the macro using the Key field.
However check out this previous post that gives a good workaround for this, using a custom field to display the key in a noformat wrapper instead of using the direct key field in the issue macro:
