Is there a way to add additional filters in our Jira Cloud/Slack integration? Currently, our configuration is only allowing "Priority" as an option.

Unfortunately, there's a limitation on the filter that can be applied on Slack Integration. It can be configured by issue types and priority, as you mentioned.
There is a feature request created to implement a JQL Filter to specify JIRA notifications sent to Slack channels, just like it was configured for Stride Application:
Allow users to set notifications on slack based on JQL filters
