I've read a few similar posts, but can't seem to fix the issue.
When I click on my project Jira says I don't have the necessary permissions to view the project - I am the site admin. When I request to see a list of Projects I can see the four I manage.
I then go to Jira Settings > Permission Schemes and I can't see any Projects assigned to the Default Permissions Schemes. That doesn't make sense to me as I can access three out of four projects.
Anyone know what I'm doing wrong?

Hi @James Miesner,
are the projects you are trying to access "next-gen" projects? @Eric S explained in this post that these projects are not shown in the permission (or other) schemes since that's Atlassian's new approach to simplifying the project administration.
If you want to get access to the project, you should act as a user who is a project admin of this project who can add you (or a certain group) in the people's section of the next-gen project.
You might want to login as another user in order to add yourself.

It is a next-gen project, so that makes sense why it doesn't appear in the scheme. Thanks.

Being the Site Admin does not give you the permission to view all projects, only to administer all projects.
You should be able to go to the Project Settings of that project and make sure, that you are in a role, that has the browse project permission, then you should see that project again.

You go to Jira-Settings -> Projects -> Projects. Then there should be a list of all Projects, even to ones you do not have permission to.
With the three dots at the end, you can get to the project settings.
