I would like to learn more about creating Jira Reports and Dashboards. Can someone point me to some helpful on-line courses and/or in-depth documentation?

I would suggest to explore the Atlassian University free courses to get started with Jira reports and dashboards. Based on your progress and interest, you may enroll for the skill builder course to even getting a badge.

I suggest you to take a look at this page and the correlated articles.

For what is my experience the best way to learn more about reports and gadgets is to try, try and try again. I think you don't need to do or research any online course because there isn't much to learn about them. When you try a different use case for each gadget you should have pretty clear everything about this topic.
