I have Priority, Progress, and a custom dropdown field on my issues. They are definitely in the Edit Screen.
When I double click on these nothing happens. Other columns values open up a field for editing when double-clicked (summary, assignee, due date, etc).
These issues are all in a "next-gen" project, if that makes a difference.
It seems to be a limitation
Inline editing is not available for some fields, it says you can edit these fields and priority is not one of them:

That's what I was afraid of but couldn't find any documentation that was specific. Thanks, though it is a strange limitation.

Just a quick update here.
As of now, it's not possible to inline edit custom fields in Structure Cloud.
We already have a task to change this behavior, and I will make sure to post an update here when it becomes available.

I'm happy to announce that with the latest Structure Cloud update it is now possible to do Inline Editing on some fields, including Priority.
I encourage you to check it out as it might address some of the questions on this post.
