Jira uses "issue" to mean "item that needs some attention", and it uses it everywhere.
You really don't want to change it to "ticket". It's a bad word to use to describe issues (issues isn't great, but ticket is just plain wrong. Bugs, Tasks, Epics, Defects, Meetings, etc, all could be described as "issues", but not Ticket, it's just the wrong word),
Most importantly, if you were to change it, you put your users in a place where none of the documentation, support, or training would match.

Making changes to menus aren't possible without plugin. I've scriptrunner plugin and it doesn't help in renaming an existing menu.
To hide the menus, look the below screenshot. You need to use scriptrunner to hide the menus.
In my case, I have hidden release menu for ABR project.
You can find the web panel details when you move your cursor on the menu. Like below -

There is no direct option to arrange the menu in native jira. I found a plugin which does the work.
