I couldn't find an answer to this anywhere.
Is it possible to adjust the default timing after which tickets are removed from the Kanban board? Sometimes my tickets can stay in one status for more than 14 days but still need to be processed. I've attached a screenshot below.

It is not possible to modify the default value of 14 days in the Core board for now. We already have a feature request which covers this topic:
In order to avoid this, what you can do is not leaving your tickets in the last column, which is the only column that remove every ticket that is over there and have 14 days of inactivity.
Leaving them in another Done/Completed status, but in a different column, for example, will avoid this. For example, something like this:
Please note that you need to make sure that one of your "Done/Completed" status still need to be as a In Progress task. Your workflow will be something like this, which only the green status/column will remove the tickets with 14 days of inactivity:
