I do have a number of projects. What i need, is for a specific user to limit his access only to one project.

You simply need to ensure that the user is not in a role or group that has permissions to browse or otherwise access said projects. You will need admin access to achieve this. And likely you will need system or Org admin access so that you can influence who is in which role or group.

Need to ask whether there is a relevant documentation or short of a guide or something like a flow regarding roles, groups, permissions. I do have a number of requests regarding users and projects. Eg need to make accessible a project only to those users who are licensed at Jira Service Management.

This is how I operate my Jira instance however I just discovered that my users can search in the people navigation and see all of my clients' and developer's names which I am not comfortable with. Does anybody know how to only allow users to ever see other users that are within the project?
