That is a feature that Atlassian is choosing not to implement, based on the Won't Fix status of this issue.

Using Move issue event

Add Action update assignee and choose value as unassigned.

Hi @Lakshmi CH ,

you can't do that using builtin feature. You could implement a listener based on the issue moved event that clean assignee.

This feature has been requested in the past but without success https://jira.atlassian.com/browse/JSWSERVER-16527

Not sure how I would automate that. Or why. But you could bulk change the assignee to unassigned, then move the issues
