Migration from server to cloud

Hello, 

I would like to ask a few questions about the best way to plan and organize a migration from server to cloud of an instance that is used for more than 10 years.
We want to know another experiences.
What do you do with the history? We are not able to extract bulk of issues obtaining timeout always... so it's hard to migrate only the configuration.
Wich is the best way to plan the go live? because we need to do a lot of manual task at cloud because of our custom workflows...
