I am looking for multiple Checklist functionality like Trello offers - easily add more than one simple check list.
Is there an add-on that does this? All seem to be built on checklist templates that allow you to do only one checklist or only one per type.

as Angelica mentioned, there are several apps that allow the addition of a checklist to the issue. Not all of them support adding multiple checklists though.
We have specifically worked to create an app that allows user to add multiple checklists to a single Jira issue. You can check it out on the marketplace: Multiple Checklists for Jira
The only other app I've personally tried and know it supports multiple checklists is Smart Checklist. There may be other solutions as well.

Just to make sure that we are on the same page, you need to add a checklist to mark things as "Done", basically a ToDo list, is that correct?
If so, there are some add-on that may help you:

I work at Valiantys Software, and we offer one app that might fulfill your need. It's called Elements Checklist for Jira and it allows you to create smart checklists within the Jira issue.
You can have multiple checklists per issue type, templates that activate based on JQL conditions...
