Can you check what is the resolution has been set for the closed issues? also, I observed that your JQL is not properly managed... I mean to say..you have been used resolution = unresolved ..3/4 times with operation OR/AND.
Jira will recognize the tickets have been closed or not based on the ticket resolution but not the status.
It is either Done or Won't Do. How can I set it up so closed tickets do not appear in the filter at all?

Now you can select the closed tickets and do the bulk change and set the resolution to Done or won't do.
To avoid this in the future, as @Rudy Holtkamp in his comment you can add the post function to resolve issue transition to auto set the resolution so that whenever the user will transit the ticket to resolve/close then the resolution will auto set.

Your filter is only showing issues that don't have a resolution set. So the closed issues that are showing up don't have the resolution field set. You probably want to make sure that you set the resolution field during a transition (with a post-function).
For now, you might be able to replace the clause 'resolution = Unresolved' with 'StatusCategory != Done'
