Need to help with best practices to configure JIRA

I am new to JIRA and have been assigned task to configure JIRA for an ongoing software development project. Here is the brief of my requirement. 

We have a large program under which multiple projects are being executed. These projects run in parallel and have its own project-specific backlog. Each project will have multiple epics and each epic will have multiple user stories. 

Each project should have its own Scrum board and there should a way to manage multiple releases.

If someone can provide details on how to use various fields available on JIRA issues, it will be a great help.

This is rather a bigger topic, but I'll try to give you a starting point. Please go through the Atlassian documentation on https://confluence.atlassian.com/adminjiracloud/adding-editing-and-deleting-a-field-configuration-844500796.html and follow related links mentioned. 

You can also start with a sample project in Jira and try playing around with the fields.

In addition to the above, you can also refer to many YouTube videos available. 

If there is anything specific about fields, please post here and we have experts that are eager to help you.
