Hey,
I've the free plan and I created some new projects by a template. In these projects I've the possibility to get 3 hierarchy levels.
1. => EPIC
2. => Story & Task
3. => Sub-Task
I also have an old project in which it seems to be only possible to have 2 levels
1. => EPIC & Story & Task
2. => Sub-Task
How can I also get 3 levels in this project? I cannot find any settings to do this and due to it is an older project I don't want to migrate it into a new project.

Welcome to the Atlassian community.
First, are you working with a project that is Team Managed or Company Managed? That information will be shown on the View All Projects screen and at the bottom of the panel on the left when you view the project.
Next, is it a Software project or a Business/Work Management project? If it has navigation options on the left like Board, Issues, and Reports, then it is a Software project. If it has navigation options across the top like Summary, Board, and List, then it is a Business/Work Management project.
By default Jira has a three level hierarchy:
Epics
|-- standard issue types (i.e. Story, Task, Bug)
|-- subtasks
It is possible that the template used to create your project did not include Epic, but Epic generally is never included at the same level as standard issue types.
What exactly leads you to the conclusions that Epics are available but considered to be at the same level as Story and Task? Can you provide a screen image that demonstrates that?
