As an alternative, you could create a separate filtered list using Jira Filters as this will allow you to filter on custom fields.
This will display as a list rather that a board but may help you to easily pick out the information you need.
You can use either basic or JQL to finetune your results.

The Board Summary view is currently limited to filtering and grouping based on standard fields (like status, assignee, sprint, etc.). Custom field filters are currently not supported in that view.

Unfortunately, you can't use a custom field in the Summary tab. However, you can filter by a custom field in the List tab — that should work for your needs.

What i can see that the Filter in the Summary is to see the insights of that project sepecific for example, if you select the assignee and the user then the summary page will show you the total ticket assigned, worklod, performance, status wise tickets etc.
So, in the summary filter we can not select the custom field to all this kind of information at the moment.
