Is the reply email address (inside a project) dedicated to a certain project, or is it the same for all projects? Where can the address be changed (per project) if it is project dedicated?

It can be the same for all projects.

Or if you are viewing your project in the Administrative panel, summary, you will see in the notification section, your email address. You can click on the pencil there and change it.
