Jira, much like BitBucket seems to be a very powerful tool, yet designed with simplicity in mind. So I've been using Jira for about two months now, I have about 7 or so projects defined with multiple sprints running. So my question to the community is what is the most common way to run the SCRUM process through Jira? Multiple projects with each project having their own sprints? Or is it recommended to create only one sprint where various user stories from different projects are managed?

It will depend on how your company wants to scale Scrum across multiple teams. A common approach that I have seen is not actually tied to projects but tracking teams with different boards.

Please note that regardless of the projects, teams would have their own scrum boards and backlog, while the Product Owner (for example) could see the big picture in the Global backlog.
I hope it gives you a new point of view on the scaling challenge.

From my experience, the best thing is that you have several projects, because I understand that each one is independent of the other.
In each project create the sprints that correspond with the amount of tasks you can perform and with that task number or user story, you can tag in the bitbucket and you can have the trace of which project you are doing that tag
