Is it possible to assign more "Assignees" or teams in Project Management?
Right now, I am an individual and can only assign one person.

In Jira you can assign single person to single issue. This assignee can change during issue lifecycle. This configuration is by design and it helps to reports on work assignment, work estimation, work performance,...

If you would like you can add additional custom fields "User picker" in which you can select both single and multiple users. You can name such field for example "Responsible team" or "Assisgned team" to indicate persons required to finish that task/resolve issue. Remember to add newly created issue on screens used by your project.
