My colleague followed the instructions from here:
... so that JIRA tasks are automatically generated when an email is received by a mailbox. However, we can we also automatically tag these JIRA tasks with labels or components, so we can clearly see when tasks have been created?

@Ronan H You can customize the workflow for this issue type (that is created from email) to add a post-function on "Create transition" that will set the values of System fields "Labels" and "Component/s" to specific values that you want for this issue type.
You can use the "Update Any Issue Field" post-function from "JIRA Suite Utilities (JSU)" 3rd party add-on for this puspose.
