We are in the process of upgrading to Jira premium. We will be archiving old projects. My question, what happens with the boards and filters that are linked with a project? Do they get archived as well? What happens to them?
Also, if there is some good documentation on the subject, please advise.

Archiving the project will also archive boards that are located within that project. Filters do not live within a project so they will not be archived, but if you access the filter it will return an error message saying that the project does not exist.

Yes, shared filters can be removed, just go to Settings > System > Filters and you can search for the filter from there and remove it.

Just to be sure...For example, we archive project ABC along with the board. We then delete the filter associated. When we view ABC, we will still see all the issues tied to that project? And if we unarchived, we would need to create a new filter since we deleted the original one?

Just to correct it regarding removing filters, you cannot remove filters that are associated with a board in an archived project. You would need to remove the board first before you can remove the filter.
You can only access issues in an archived project if you have a direct link to the issue itself, you will not be able to go to the project and view all the issues.

In your last paragraph, you mention "direct link to the issue itself". Can you elaborate, do you mean a filter or? Thanks.

Each issue in the project has their own URL similar to this, https://<your instance>.atlassian.net/browse/<issue key>
This link will still work, but you would not be able to go to the project via it's link, https://<your instance>.atlassian.net/jira/software/c/projects/<project key>, to view all the issues.

It does affect boards located within the project, and here is an example:
In the Charley project there are two boards
After the project has been archived non of these boards are visible if you search for them and if you access the direct link to them this is what you will see
