As a team member trying to Epic link a story to a parent Epic, I no longer see my choice appear in the pulldown for the starting text, and see "Unlabeled" in front of the Epic number that I have to type all in.  Before when I would type enough characters, the choices would come up automatically to choose from.

To identify the parent Epic I need I have to go to a separate document to identify the sprint maintenance Epic I need, or I can query to try and find it.  This issue started appearing after the recent iTrack upgrade.

Can you clarify for us what is "iTrack"?

Can you provide a screen image to illustrate the issue you are having?

When "unlabelled" appears in the Epic Link field the most common explanation is that the Epic issue's Epic Name field is blank. But there are a few other possibilities as well.
