Hi @Mathana Madasamy Ravi Nadar
I don't know if it will help you but what i have done for my customer is when the issue reach a specific status i put the assignee field empty automaticcaly, fill a group picker field and send to this group a mail after that people of the group can decide wich one will take the task.

Is there a way to notify the assignee by sending an email to tell that she has a task to work on, and so that she can approve it?

For me you can only send an email to the assignee to let him/her know that a task has been assigned to him or her.

Is it possible to show in Jira itself, that the person who was assigned the task has actually approved or approved the task?

Maybe some addon will do it but as far as i know i can find it. You can add a workflow status "Approved" But your workflow will be very big if you can assign several time an issue.
