Has anyone who has been working multiple scrum projects have any thoughts as to how to monitor status or epics or user stories or linked issues blocked so that these issues dont fall behind their estimated completion dates?
The things I thought might be important are:
1 - Status: Not assigned, no estimated hrs, staying too long in In Progress for 2 week sprint, or lack of work performed and few comments or signs of progress or commentary.

I think I have two suggestions that might help you get a better visibility of what is falling behind your scrum projects:
1 - You can create a single global board to track all the items you want across projects
Basically, you can create a new board to track all the items of your Scrum projects, using the JQL filter of that board to specify what kind of parameters/scenario they should be reproducing to appear in the board, like time without any updates, Assignee, NO Estimated hours, etc.
You can also split the board by using quick filters, so you can display only the unassigned tickets, or the ones with on updates in the last 5 days, etc
To create a global board, you can perform the steps below:
- Go to your issue navigator > Create a filter to return all the issues you want > Save it with the name you want
- Back to your project, click on the board drop-down > Create a new board
- Select to create board from an existing filter and select the filter you created, following the steps of the client to configure it as you need
2 - You can create JQL filters in the same way I suggested in step one to return each of the issues you want, however, using the subscription method to get notifications about them in the frequency you want.
