We would like to manage in which projects are our shared boards (grouping up issues from multiple projects) visible. I feel like this feature should be available in Cloud - called - Board Location. Is there something similar for server also?

Since shared boards are just representations of shared filters and filters can include multiple I'd suggest making a "Shared Boards" or "Scrum of Scrum" project that only contains filters that pull issues from other projects. That would give you a single location that you could control via permission schemes to access all of the shared boards.

The issue is quite different.
We've got a filter having issues from Project A + Project B + Project C.
This filter is used as a base for a shared board.
This board is available to be seen/accessed via 'boards dropdown' in each of the Projects (A,B,C). We would like to find a way how to remove this board from the dropdown listing of for example project B and C, while still having issues from A,B,C visible in the board (or included in the filter).

Thanks for clarifying, I'm not aware of any way to do that in Jira. you can submit it to Atlassian as a suggestion via the support site at https://support.atlassian.com/contact/

Can confirm Scotts thoughts, from the principle of showing list of boards there is no known way how to that. As far as I know.
