I was editing the current sprint, March 2021 to update the date start/end. I noticed that some closed issues (some back in November 2020) got assigned to the April 2021 sprint which has not started yet.
Why did it automatically assign certain issues to the future sprint?
Closed issues should not be editable.

Do you have any automation rules or are you using Advanced Roadmaps?
For making closed issues non editable you can configure workflow property.
jira.issue.editable=false

Nope, I'm quite new with JIRA and do not have any automation rules and def not using advanced roadmaps.
I thought Closed issues are by default not editable? It seems only the sprint field is editable when Closed.

Take a look at the link I shared. You will have to modify the workflow associated with your issue type in your workflow scheme.

Looks like I don't have access to modify the workflow for issues. Looks like I have to contact my administrator?
