Is there a way to change the date used by the calendar, i.e. for documentation, I'd prefer to see items by their publication date, rather than by their Due Date.

Are you using the Calendar feature in a Work Management project, or another Calendar feature?
With the native Jira Issue Calendar gadget on a Jira Dashboard you can choose the date field to use.

If there's no solution, I've decided to just use the Due Date for the Jira calendar. But it'd be really nice to have the option to select other dates, like Start Date or Publication Date. I've attached a screenshot of what I'm seeing, in case it might help:

With the Business/Work Management project calendar currently it is locked to displaying Start Date or Due Date.
There is a change request to enable selection of other date fields. You can comment/vote on it here:

You can sync any Jira date fields with Planyway dates. So try to install Planyway team planner. Your start and end dates will be associated with the custom date you select.
If you work with several projects, repeat the steps above for each of them.
