We have multiple projects in JIRA, but we would like one dashboard with a calendar that is showing all releases (regardless of the project) in the issues calendar gadget.
Is this possible?
You can create an Issue Filter for the releases by going to Search Issues, leaving the Projects field set to All, then using the "More" dropdown to filter on the field you use to indicate the release in the issue. Save the filter, then use is in the gadget when you create/edit it. (In the Project or Saved Filter field.)

I still have trouble seeing all projects in one calendar. I can see all of the projects' start and due dates, but is there a way to see these dates in the calendar?

For my case it works, try doing the following:
# Before configuring the chart
- On the top right search bar, click it and then click "Advanced issue search"
- Then use the criteria you want, for example I used: Projects=All (you can add other constrains with "more")
- When you have your filter, click "Save as"
# Now in your "Issues Calendar" chart
- In the configuration with name "Project or Saved Filter" search for the name you gave to your filter.
