Can I change the workflow on an active jira project?

I never changed the workflow of my jira project and I need define a workflow to solve some things in the project. Am afraid to apply it in my project already started with 2 sprints finished and 1 running.

Here my questions:

1. Which is the risk to apply a new workflow in a running project?
2. Which are the right steps to follow?
3. How can I do to not loose data/incidents already created on jira?

Thanks a lot for your help. I read, and read about and I can´t find answers to my questions.
