Can I revert the changes made to an issue type's field configuration?

Unfortunately, There is not a revert command. It is left to the user to develop good change management practices.

you can contact Atlassian support but to be honest I think it would be a long shot to expect they would address. IMO you should employ good change processes and/or a sandbox to test changes.
