how do I add a status to a column if it's not showing up (not even greyed out) in column management and I have admin right

Do the statuses exist in your workflow?

If it does not exist, you must include it in your workflow so that the option to insert in the columns appears.

Thank you - the status don't exist. The issue now is that I don't seem to have access to edit the workflow even though I have all the access as an admin assigned to me...

Can you upload a picture of workflow and/of the top bar of your board (the names to see), then I can be able to help you more effectively, if you desire.
