I am struggling while trying to customize the "List" view. For some reason, my changes are not saved and, anytime I open the app, I have to set the fields up again.
I would like to customize the list so that every time I log in the "hide done items" view option is already activated.
In addition, I would like to "pin" certain fields (such as start date, assignee, etc.) and "unpin" other ones that appear by default (like reporter, labels, etc.).
I was looking for solutions on the internet and some people mentioned that it is possible to customize it through the "Issues Layout" option in the sidebar of the project settings, but I don't have that option (see image).
Did someone experience the same issues?

The project that you are having is the team-managed project. Instead of the issue layout that you have on the company-managed project, you would need to select Issue types, which will actually open the issue layout for every issue type.

Even though if you have removed the fields from the issue layouts, you can return then back by re-adding them to the layout.
Also, are you using Scrum or Kanban?
