As you can see in the included screenshot, incoming email for our Service Desk is configured for Strip Quotes as 'true.' For our Jira instance, Strip Quotes is 'false.'
Ok, I just solved it:
Once you are at your mailhandler overview you can click on edit. That's where I was stuck and there's no option "strip quotes" to configure but there is a next button. Click on this button and you get another configuration view where you're able to set much more settings including "strip quotes".
