xxx project= Open or Close , it will us to archive projects.

You could do it like this , once logged in as JIRA administrator go
Project > Project categories scroll down and add new project category
lets say Archived Projects or Closed Project . then go to the screen you have presented and select Archived Projects or Closed Project (which ever one you decide to use) on the Project category option.
Finally you could edit Name of the project field
like this [Archived Project] Project_Name [ Archived Project] to show that this project is archived.
for open projects just add a new project category, Production projects for example that means open projects and then assign the project to this category i have mention above.. how to do it no need to change the name of project since it is not Archived or Closed project.

You have available in the marketplace Profields app. Profields gives you fields for Projects, and you can have any field type: Select List, Status, Text, etc...
Also, you have a Project Navigator where you can work with your projects!
