My dev team has requested using a shared email address to assign all Jira tickets to make it easier.
Is that possible?
Depends on what you mean by a shared email. You can only assign issues to users in the assignable list. You can create a dummy user that points to an email distribution list and assign that user. Remove the user from the logon group so it won't use a license.
The issue will not appear in anyone's 'assigned to me' list
You will also find that people think someone else was doing it, so you'll get issues dropped through processes. It's not a good idea, I've never seen it work in real life.

I agree with @Nic Brough -Adaptavist- - we've moved away from shared mailboxes for just this reason

As @Nic Brough -Adaptavist- and @Liam Green said, this isn't a good idea. Better to assign it to the team lead and they can reassign as needed.
