Hello - I'm on JIRA Server v7.8. On my Kanban board for a project, I cannot seem to find a way to enable the Epics Panel. Can you please help? I'm attaching a couple of screenshots that are relevant to this issue. Thank you.

That works but isn't an ideal solution for me as I'd like to not have to add another status just to make this work. Is this (enabling the Epics panel) the only way to change the color associated with epics?

but Epic view only applies to the backlog view of the Kanban. Now if you want to see Epics in the Kanban view (not backlog) you can view swimlanes by epic.

You can add a Scrum board to your project in addition to your Kanban board. When you want to change the epic color, just switch to the Scrum board and then click Backlog in the sidebar.
When the backlog view opens, you can edit the color in the epics panel there. No need to create a separate status as mentioned in the other solution but you will need to create a separate board. However, you could name it something like Only for Editing Epic Color so no one uses it.
