I have opened the registration for the customer portal and I was testing the signup process. I enabled captcha and the confirmation email.
When new users enter the email and captcha, they receive an email with the following text:
From: {variable_name} <email address>
Subject: {portal_name} Finish signing up to {variable_name}
Hi,
Almost done!
Follow the link below to finish signing up to {variable_name}. For security, don't share this link with anyone.
Sign up buttom
And then the footer has a custom logo, and a text:
{variable_name} sent you this message, powered by Jira Service Management
I can't find the place where I have set up the value of the {variable_name}
I have also downloaded the email templates but I can't find the file that contains the text.

Unfortunately, righ now, the welcome mail not. Btw, it seems that this feature is currently in progress https://jira.atlassian.com/browse/JSDSERVER-1386

In the meantime, I would be okay with just knowing where can I find the value that I showed in my question as {variable_name}.

Maybe I didn't explain myself correctly.
The email that I pasted in my first message is auto-generated by Jira and I didn't add any of the variables.
In the original email those variables are values added by Jira and I want to understand where does Jira takes them from.
Example.
If the {variable_name} is "My Site" and the {portal_name} is "My Portal" then in the email sent from Jira when users need to confirm their account, they get the following:
Subject: My Portal Finish signing up to My Site
Hi,
Almost done!
Follow the link below to finish signing up to My Site. For security, don't share this link with anyone.

Where does Jira take "My Site" and "My Portal"?
I must have set them up myself but I cannot find them.

My Site should be site of your jira. To update that value use the following approach https://support.atlassian.com/jira-cloud-administration/docs/configure-the-look-and-feel-of-jira-applications/
My portal should be the name of portal associated to your project. In order to update it use the following article https://support.atlassian.com/jira-service-management-cloud/docs/add-a-name-and-logo-to-your-portal/

That was my guess as well, but when the My Site value is different from what I see in the email.
It could be a Jira problem that only when restarting the server, it will make the change.
Anyway, I think those are the places where you set up those two variables so thank you again for your help.
