We have the project is running the A workflow. Now I want to change it to the B workflow. Is that safe to remove the A workflow after adding B.

I assume this is a Company-managed Project?
Just for clarity, Team-managed Projects have workflows, but you can't replace one with the other - you just modify the live one.
Can I clarify you will...
If this is the case, it is fine to delete Workflow A if you want to, as it's inactive. I would encourage you to keep your platform clean of unused configuration where possible.
But consider if you should you keep inactive Workflows for a period of time, just in case you need to roll-back for any reason. We do this sometimes, to avoid rework if a team isn't happy with the new workflow after a few weeks.

I'm an Jira admin and I can replace the workflow to the other within Projects. And each workflow had each workflow scheme for itself (And I'm not gonna change workflow scheme). Basically I just want to change from A to the B workflow within Project.

Just to clarify...
^ So you'll need to either replace the Workflow(s) impacted within the existing scheme, or replace the scheme entirely with a new one, to apply Workflow B.

I have another concerns is I've changed the workflow within Project. But when I go to workflow. On the 'included workflow scheme' column, it show 2 scheme, it should be 1 (I assume that being added automatically) So how do I remove the new added scheme. There's no error until now but the new workflow I've changed is shared to more than 10 project. I afraid that will be got some problems in future.
